Abstract

We used four different methods to obtain chitin from lobster Panulirus argos. With Muzzarelli's method we got an optimum yield of 18 percent dry weight chitin of the best quality. Using any one of the methods we obtained an average of 8.75 percent. ; Chitin was submitted to a solubility test and an analysis for the total content of ashes and nitrogen, obtaining some recommended values for its production.
