Abstract
Energy efficiency of butane gas consumption was determined. The data were collected were during processing a batch of 374 kg of brown sea cucumber, Isostichopus badionotus, in a fishing cooperative in the state of Yucatan. Based on these data, it was calculated that the total heat, for heating the cooking water and cook sea cucumber, was approximately 67,370 kcal. By comparing these data with real-butane gas consumption, in the practice were consumed 12.64 kg and theoretically requires 6.33 kg of butane gas. Finally, it was shown that there is an energy loss of about 50% mainly due to heat dissipa-tion to the environment because of rudimentary systems for cooking.
